Known as the “black diamond” of French cuisine, Périgord truffle brings with it an unmistakable aroma—earthy, rich, slightly musky. At Jardin Des Sens Saigon, we honor this ingredient with a theatrical, multi-sensory creation we call Black Truffle Madness.

The dish begins humbly—with handmade potato gnocchi and a velvety parmesan espuma—but quickly evolves as our chef shaves fresh winter truffle tableside, allowing its fragrance to rise with the heat of the dish. A final touch of aged balsamic and truffle-infused oil completes the composition.
